Strawberry Blueberry Shortcake

Happy July, everyone. I can not believe that it is July already. I feel like this year so far has gone by slow and fast at the same time. I find it so crazy the we are half way through 2019. Anyway, for today post, I thought that I would share with you a simple and festive dessert that you can that bring to party or a low key backyard BBQ . It’s a little twisted on the classic strawberry shortcake.

Ingredients

  • 2 lbs of Strawberries
  • 2 Cups of Blueberries
  • 1/2 tablespoon of sugar

Whipped Cream Ingredients

  • 1 cup of heavy whipping cream
  • 1 tablespoon of maple syrup
  • 1 teaspoon of vanilla extract

Shortcake Ingredients

  • 2 1/3 cups of Bisquick
  • 3 tablespoons of sugar
  • 3 tablespoons of melted butter
  • 1/2 cup of milk

Directions

  1. Clean and cut up the strawberries in bite size pieces. Place the cut strawberries and the blueberries into a medium size bowl . Add the 1/2 tablespoon of sugar. Set aside .
  2. Make the shortcake.(I use the Bisquick recipe) In a mixing bowl combine all ingredients together. Divide mixture and bake for 15-20 minutes at 400 degrees. Then let cool.
  3. While the shortcakes bake, make your whipped cream . Combine the cream, maple syrup, and vanilla extract together in a chilled mixing bowl. Whip together using a hand mixer until you have peaks the form.
  4. Cut the shortcake in half . Place a spoonful of whipped cream on the bottom half of the shortcake. Then add lager spoonful of fruit on top of the cream. Place the top of shortcake on top of the fruit. Finish of the with drop of whipped cream, strawberry, blueberry and dusting of power sugar.
  5. Enjoy!

30 before 30

Tomorrow I turn 26 years old and it really got me thinking about what I have done in my life so far and what I want to do with my life in the future. I put together a list of things that I want to achieve before I turn 30 years old.

I want to take these next five years to say yes to as many possibilities that I can. For the last 2 year, I have kinda shut myself off from the world and have been in this weird funk. So, therefore  I really want to take this next five year to really put myself out there, I am really sick of letting life pass me by. Here is what I hope to achieve before my 30th birthday.

 Buy a house.

Live in a foreign country for a year.

Go on a Solo trip

Spend New Years in a different country.

Go to the Kentucky Derby

Run a half or a full Marathon

Go to the Olympics

Buy my first Luxury bag.

Buy a new car.

Buy a 1st class tickets

Pay off my student loan

Get a second degree.

Learn a new language. ( Currently trying my hand at Swedish )

Volunteer

Learn how to ski

Take my parents on a Holiday.

Have more confidence.

Grow my Blog.

Go to Amsterdam.

See the northern lights.

Attend Fashion Week

Read more.

Visit all of the Disney Parks (3/5 so far !)

Get a tattoo

Go ziplining

Take a cooking class

Take a girls with my mom and sister.

Pay for a vacation for my family.

Say yes to more opportunities

Homemade Pizza

Pizza is by far one of my favorite meals that I like to eat, it’s so simple yet so delicious. Now, that I have been getting into making more of my dinners at home to save money. I started to play around with making pizza at home. I quickly learn that it is super easy and can turn out to be ultra delicious. Another reason why I love making pizza at home now is because I can make it any way I like. If I want to make it healthier I can but if I want to have a junk food day I can by making the pizza not so healthy. This the best of both worlds because I am not spending a lot of money on pizza and I can also be a little healthier too.

What You Need:

3 1/2 Cups of Flour

1 Packet of Yeast

1 Cup of Warm Water

1 Teaspoon of Sugar

Any topping that you may want

How to Make it:

Heat the cup of water to 120-125F. Stir in the teaspoon of sugar and yeast into the warm water. Let the yeast sit for about a minutes. In a large bowl mix the flour and yeast until it forms a ball. Place the ball of dough into a clean bowl. Cover the dough and let rise for 30-40 minutes. Cut dough into about 4 or 5 smaller dough balls. Let the dough rise for another 10 minutes.After they rise roll out the dough. Place topping on and bake for 15 minutes in an oven set at 425F. Lets cool for 5 minutes and enjoy.
